Caramelized Sweet Potatoes and Spinach Fried Rice

This caramelized Sweet Potatoes and Spinach Fried Rice is one of my favorite easy and delicious side dishes. It’s full of flavors and textures. Fluffy rice, caramelized sweet potatoes, crunchy sunflower seeds all coming together to make one amazing, mouthwatering dish that goes with everything from grilled portabella mushrooms to you name it. The choices are endless and all very delicious.
So, it’s no secret that I Adore fried rice… I mean, that fluffy wild rice is pretty hard to resist, but together with the herbs and sweet potatoes, it’s one of my favorite rice dishes ever. I could eat it all day, every day.

This is one of those recipes that came to be by happy accident. I had only one sweet potato left and was thinking of ways I could use it, when I spotted the fresh spinach in my refrigerator. You can use either fresh or frozen spinach for this dish, but I always prefer using fresh if I can. If you don’t happen to have spinach in the house, you could always sunstitute it with kale or another green leafy plant.
One of the great things about this recipe, is you can use pretty much whatever you have in the house at the time of cooking… I have also tried using regular potatoes, but I do prefer the what the sweet potatoes adds to the dish.

What type of Rice should you use

You can use whatever type of rice you prefer. I personally like to use wild rice, brown rice or even risotto rice, but any type of rice will work. For me, there’s something about using wild rice that appeals. It’s not just the different colors and textures… It’s also knowing that switching up the foods we eat provides a larger variation of nutrients.

How is this Caramelized Sweet Potaotes and Spinach Fried Rice recipe made? It’s so easy. Just:

Instructions

  • Cook the rice as instructed on the package.
  • When the rice is around halfway done, heat a pan with olive oil or coconut oil and add the diced sweet potatoes. Season with a little salt and let the potatoes cook at medium high heat for around 5 minutes, while stirring occassinally.
  • Once the potatoes start to get golden edges is tender to the bite, add the diced zucchinis, minced garlic and spinach leaves. Allow the spinach leaves to wilt and become soft before adding the cooked rice. Season with salt, pepper, chili sauce, maple syrup, rosemary and thyme and stir everything together to combine.
  • Mix in the sunflower seeds, sesame seeds and the lemon juice and add extra seasoning if needed.
  • Serve as is or with a dressing and a garnish of fresh herbs and enjoy.

  • 3/4 cup Rice Wild rice, brown rice or risotto rice

    Just made this after Google searching “food to help with migranes” as my partner was suffering. I discovering green veg, brown rice, sweet potato, spinach are all supposed to help so ideally this recipe ticked all the boxes.

    I was a bit sceptical on how it would taste, thought it might be a bit dry/bland but was pleasantly surprised! Super tasty and really quick to make. I will definately be making this again… Even when my partner hasnt got a migrane!
