This easy mouthwatering baked tofu recipe is my absolutely delicious take on making a vegan roast. It’s simple to make and very low-maintenance because the oven does most of the work for you. And because the veggies and tofu roast are made together in the same pan with the sauce, all the flavours infuse the sauce with a creamy richness and ads a whole extra level to the dish.

Ingredients
1tbspOlive Oil
1block (300g)Firm Tofu
1poundMixed VegetablesCan be frozen
1cupCoconut Milk
3tbspTamari Sauce
2tbspHoisin Sauce
Pinch of Chili Powder
2tspDried Thyme
2tspSmoked Paprika
Pinch of salt
Instructions
Preheat the oven to 350F.
Pour the veggie mix into a baking pan. Remove the tofu from the packaging and pat it dry with a clean towel. Place the tofu on top of the veggies and pour the coconut oil into the pan. Drizzle olive oil over the tofu.
Next, season with tamari sauce, hoisin sauce, chili powder, dried thyme, smoked paprika and salt. Use a fork to gently stir the seasoning into the sauce (but leave the seasoning on top of the tofu).
Bake the tofu and veggies in the oven for 25-30 minutes or until the veggies are cooked and the tofu is starting to turn golden on top.Cut the tofu roast into slices and serve.
