Ingredients

  • 2 tbsp Olive Oil
  • 2 cups Carrots Peeled and Sliced
  • 2 15oz cans Butter Beans Rinsed and drained
  • 1 Red Onion Diced
  • 2 cups Green Cabbage or kale, Sliced
  • 5 cloves Garlic Minced
  • 2 tbsp Smoked Paprika
  • 2 tsp Thyme Fresh or dried
  • 1 tsp Dried Basil
  • 1 tsp Sea salt or Kosher Salt
  • ½ tsp Dried Chili Flakes
  • 3-5 Bay leaves
  • 2 cups Vegetable Stock
  • 2 15oz cans Canned chopped Tomatoes
  • 1 bunch Fresh Basil or Parsley Chopped (for garnish)

Instructions

Cooking on a stove

  • Heat olive oil in a medium or large pot. Add the sliced carrots and cabbage and let them cook for a few minutes while stirring occasionally. Add the diced onions and season with all the spices and salt. Cook for 1-2 minutes before pouring in the minced garlic. 
  • Pour in the vegetable stock and canned crushed tomatoes. Mix everything together and turn the heat down to a simmer. Place a lit on top of the pot and let the stew cook for 15-20 minutes.
  • Once the cabbage is soft and silky and the carrots are tender the stew is ready.
    Serve with a side of fluffy rice or couscous and top with fresh basil or parsley.

Cooking in an instant pot 

  • Place all the ingredients in your instant pot or pressure cooker. Set to high for 20-minutes. Release steam. Taste test and add more seasoning if needed. 
  • Serve with a garnish of fresh basil or parsley and enjoy.

Cooking in a crockpot 

  • Place all the ingredients in your crockpot and stir to mix. Cook for 5-6 hours on high, or 7-8 hours on low. Stir together to combine and add extra salt if needed. Garnish with fresh basil or parsley right before serving.
