Breakfast doesn't get much easier than this quick and easy vegan granola yoghurt breakfast bowl. It's super simple and accessible and barely takes 5 minutes to make.

Ingredients
¾cupPlant Yoghurt
½cupGranola
½AppleGrated
Juice from ½ Lemon
1tbspDate PasteOptional
5Fresh Mint LeavesChopped
Date Paste Recipe (makes 1 cup)
1cupDatesSeeds removed
½cupVery Hot Water
Instructions
Making the Date Paste
Pour the dates into a bowl and cover with very hot water. Let it sit for 1-2 minutes. Pour the dates plus the liquid into a blender and blitz until it's smooth and combined.
Store in a closed container in the refrigerator.
Making the Breakfast Bowl
Pour yoghurt into a bowl and swivel a spoonful of date paste through the yoghurt. Top with the grated apple and squeeze lemon juice over.
Finally, add granola and mint leaves and serve.
