6Eggs
½cupCottage Cheese
1Red Bell PepperSliced
½Red OnionDiced
½cupSweet Corn
10CapersChopped
10 Black OlivesChopped
Pinch of salt
Pinch of Pepper
1tbspFajita Spice Mix
1tbsp Olive Oil
Instructions
Preheat the oven to 400F.
Heat olive oil in a skillet and pour in the chopped veggies. Add the fajita seasoning and cook the veggies at medium high heat for a couple of minutes. Take the veggies off the heat and spread them out evenly in the bottom of a baking dish.
Next, crack the eggs into a bowl and whisk together with the cottage cheese. Season with a pinch of salt and pepper and pour the egg mixture gently over the veggies.
Bake the frittata in the middle of the oven for 25-30 minutes or until it's cooked.
