Easy White Asparagus with garlic butter and butter beans

This easy white asparagus with garlic butter and butter beans recipe is quick, simple and so delicious. Think grilled white asparagus topped with garlic butter and with a side of oven roasted tomatoes and butter beans with mediterranean spices. It’s ready to eat in under 30-minutes and makes a great low-calorie healthy but absolutely mouthwatering dinner for any day of the week. 
This dish is deceptively simple. It’s made using only a few simple ingredients, but it packs a lot of flavours into one dish. It’s one of the best vegan date night recipe because it’s simple and quick to make but it tastes like a gourmet meal you would get at a restaurant.

Ingredients

  • 3 tbsp Olive Oil
  • 1 bunch (6 asparagus) White Asparagus
  • 1 15oz can Butter Beans Rinsed and drained
  • 5 large Tomatoes
  • 3 tbsp Vegan Butter
  • 2 cloves Garlic Finely Chopped
  • Salt and Pepper to taste
  • 1 tbsp Dried Oregano
  • 1 bunch Fresh Basil Chopped

Instructions

  • Preheat the oven to 400F.
  • Add the drained butter beans to an oven safe pan and place the tomatoes on top. Drizzle the tomatoes with olive oil, lemon juice, salt, pepper and oregano. Place the pan with the beans and tomatoes in the oven and let it bake for 20-25 minutes. 
  • While the tomatoes are cooking, begin preparing the asparagus by cutting off 1-2 inches off the end before peeling the skins of the white asparagus with a peeler. Next, heat a grill or a grill pan.
    Season the asparagus with salt and pepper and place them on the grill. Let the white asparagus cook until they are nice and golden brown. Flip them over and let them cook until all sides are golden. 
  • Melt the butter in a pan and add the finely chopped garlic. Let the garlic cook in the butter for 1-2 minutes before removing from the heat. 
  • Once the asparagus are cooked, remove them from the grill and place them on a plate. Drizzle garlic butter over the grilled asparagus.
    Top with a generous spoonful butter beans and tomatoes and serve with a drizzle of olive oil and fresh basil. 
    Serve and enjoy.
