The Best Easy Refreshing Summer Watermelon Salad

This easy refreshing watermelon salad is loaded with juicy sweetness, spicy chili and fresh herbs. It’s incredibly simple and quick to prepare, yet it is so so tasty and full of summer flavours. Made with simple and easy to get ingredients like, watermelon, bell peppers, tomatoes, fresh basil and pumpkin seeds.

It’s chocked full of all the best of what summer has to offer - this salad is a win for kids and adults alike because it tastes more like dessert than salad … but it’s actually healthy and loaded with nutrients.

Ingredients

  • ½ Watermelon Skin removed, diced
  • 1 Red Bell Pepper Seeds removed, diced
  • 1 lbs Cherry Tomatoes Cut into halves
  • 3 tbsp Sweet and Sour Chili Sauce
  • Salt to taste
  • Juice from ½ Lemon
  • 1 Spring Onion Diced
  • 1 handful Pumpkin Seeds
  • 1 bunch Fresh Basil Chopped

Instructions

  • Start by carefully cutting the skins off the watermelon. Next, cut the watermelon into 1-inch chunks and add them to a large salad bowl. 
  • Add the diced bell peppers, diced spring onions and tomatoes to the bowl and drizzle lemon juice on top. Season with sweet and sour chilli sauce, salt and gently toss to combine. 
    Finally, top with fresh basil and pumpkin seeds and serve.
