½WatermelonSkin removed, diced
1Red Bell PepperSeeds removed, diced
1lbsCherry TomatoesCut into halves
3tbspSweet and Sour Chili Sauce
Salt to taste
Juice from ½ Lemon
1Spring OnionDiced
1handful Pumpkin Seeds
1bunchFresh BasilChopped
Instructions
Start by carefully cutting the skins off the watermelon. Next, cut the watermelon into 1-inch chunks and add them to a large salad bowl.
Add the diced bell peppers, diced spring onions and tomatoes to the bowl and drizzle lemon juice on top. Season with sweet and sour chilli sauce, salt and gently toss to combine. Finally, top with fresh basil and pumpkin seeds and serve. Enjoy.
