Preheat the oven to 400F and grease the pie dish. Place the pie crust in the greased pie dish and cover with tinfoil. Pre-bake the pie crust for 5 minutes and remove it from the oven.
Heat olive oil in a non-stick pan and add the sliced apples and leeks. Season with curry powder, oregano, and thyme and mix together. Let the apples and leeks cook until the leeks start to soften. Remove from the heat and gently pour into the pie crust (after removing the tinfoil from the pie).
Use a spoon to spread the apples evenly out before pouring the plant milk on top. Drizzle lemon juice over and top with vegan feta cheese.
Bake in the oven for 20 minutes or until the pie crust is baked all the way through.Serve with a garnish of fresh basil and a sauce of your choice (I like to use sweet and sour chili sauce).Enjoy.
