These spicy roasted chickpeas are my go-to healthy snack recipe. They are deliciously crunchy, crispy and salty - think golden, spicy and crispy on the outside, yet soft on the inside.
They are so incredibly yummy.

15 ozCanned Chickpeas
1tbspOlive Oil
1tbspSmoked Paprika
Pinch of salt
ΒΌtspCayenne Powder
Instructions
Preheat the oven to 400F and line a baking sheet with parchment paper or foil.
Drain and rinse the chickpeas in a strainer and dry them using a clean dish towel (it's important to dry them, otherwise they won't get as crispy).
In a medium bowl, mix the chickpeas with the olive oil and the spices. Mix until the chickpeas are completely covered.
Pour the chickpeas onto the lined baking sheet and spread them out evenly. Bake in the middle of the oven for around 20 minutes (stir halfway through) or until the chickpeas are golden and a little crispy on the outside.
