Easy Loaded Pizza Bread

This easy Loaded Pizza Bread recipe is amazing. Like, mind-blowingly tasty, cheesy, and give-me-one-more-slice good. It’s my new favorite way to use up leftover bread that’s going stale because the pizza ingredients really bring the bread back to life.

Because I always have leftover bread that’s going stale, I’ve had to come up with lots of delicious ways to use bread. But this one is my top pick go-to recipe that I happily make every time. Because who doesn’t love pizza, right? And when eating pizza also means you’re not wasting food then it’s a win-win of delicious proportions.

Ingredients

  • 1 large 10" 1-inch thick slice of bread or several smaller slices of bread
  • 2 tbsp Olive Oil
  • 3-4 tbsp Tomato Paste
  • 1 cup Shredded Vegan Cheese Shredded mozzarella, cheddar, and Parmesan are all great
  • 5-8 slices Vegan Pepperoni or tomato slices
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Dried Basil
  • ½ tsp Sea salt or Kosher Salt more to taste
  • Pinch of Pepper

Instructions

  • Preheat the oven to 350F and line a baking sheet with baking paper.

Very stale bread:

  • Lightly dap a little water on each side of the bread slice (be careful not to use too much water. You want just enough to bring the life back into the bread). 
  • Next, place the bread on the lined baking sheet. Drizzle olive oil over the bread before generously spreading tomato paste on top of the bread, all the way to the edges. Season with basil and thyme at this point.
  • Top with the shredded cheese, spreading it out evenly all the way to the edges. 
    Place the vegan pepperoni (and any other toppings you’re using) on top of the pizza bread. Finally season with salt, ground pepper, and oregano.
  • Bake in the oven for 20-minutes or until the cheese has melted and the pizza bread crust is golden and crunchy.
    Let the pizza cool for 5 minutes before serving and enjoy.

Fresh bread:
