Ingredients
2cupsRolled Oats
½cup (60g)Vanilla Protein Powder
2eggsor 2 flax eggs
¾cupsAlmondsChopped
¾cupsDark Chocolate Chips
5tbsp Coconut Oil
5tbspButteror non-dairy butter
4tbspAll Purpose Flour
½cupCoconut Sugar
1tspBaking Powder
Instructions
Preheat oven to 350F and line a baking sheet with baking paper.
Add all the dry ingredients together in a mixing bowl and combine everything.
Add 5 tablespoons butter, 5 tablespoons coconut oil and 2 eggs and knead all the ingredients together.
Shape the dough into a long log that’s about 3-inches wide and cut into 1/2-inch slices. Place the cookies on the lined baking sheet and sprinkle a little extra sugar on top (optional).
Bake the cookies in the oven for 8-10 minutes or until the cookies are golden on top. Remove from the oven and leave to cool for 10 minutes before removing from the baking sheet. Allow the cookies to cool completely and store in an airtight container.
Notes
Cookies are good for 7-8 days when stored in a cool temperature in an airtight container.
