  • 1/3 teaspoon Sea salt or Kosher Salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Smoked Paprika

  • 1-2 tablespoons Maple syrup and fresh thyme to taste

    • - Preheat your oven to 425°F (220°C).

    Prepare the Squash:

    • - Cut the squash in half from stem to bottom. Use a spoon to scoop out the seeds. You can discard the seeds or save them for roasting later.
    • - Slice each half of the squash into ¼-inch thick half-moons.

    Season the Squash:

    • - Spread the squash slices on a rimmed baking sheet. Drizzle with olive oil, and sprinkle with thyme, paprika, salt, and pepper.
    • - Toss the squash to ensure it is evenly coated with the olive oil and seasonings.

    Roast:

    • - Roast the squash in the oven for 25 minutes, flipping halfway through the cooking time.
