  • 1 cup (240g) miso - (I like Hikari Miso® Organic Red Miso)
  • 1 cup (240g) mirin
  • ½ cup (120g) sake
  • 2 tablespoons (25g) brown sugar or syrup

How to make miso sauce Instructions:

  • Prepare the Sauce: In a small saucepan, combine 1 cup miso, 1 cup mirin, ½ cup sake, and 2 tablespoons brown sugar or syrup.
  • Mix and Heat: Whisk the ingredients together until well combined. Place the saucepan on the stove over medium heat and bring the mixture to a boil.
  • Simmer: Once boiling, reduce the heat to low. Stir continuously, scraping the bottom of the pot to prevent burning. Let the sauce simmer gently for 20–30 minutes until it thickens to your desired consistency.
  • Serve: Your miso sauce is now ready to use! Enjoy it as a marinade for proteins like roasted tofu or vegan steak, use it as a miso dressing, or drizzle over noodles and vegetables such as in my Roasted carrot Salad.
