Ingredients
1PumpkinHokkaido or Butternut Squash
6-8Spicy PeppersMedium hot or as you prefer
5clovesGarlicWhole
2tbspFresh Oregano
1bunchFresh BasilChopped
1tspSea salt or Kosher Salt
1tbspPaprika
3tbspPumpkin Seeds
Instructions
Preheat oven to 400F and line a baking sheet with baking paper.
Cut the pumpkin into halves and scoop out the seeds. Cut off the pumpkin skins if you prefer and cut the pumpkin into 1-inch chunks. Place the pumpkin chunks, peppers and whole garlic on the lined baking tray. Drizzle with olive oil, sea salt, paprika and half of the oregano. Toss to coat everything in the seasoning and cook in the middle of the oven for 30 minutes. Turn over halfway through.
Remove the skins from the roasted garlic, being careful not to burn your fingers. Use a fork or a blender to mash half of the pumpkin together with the garlic to create the creamy sauce. Add the mashed pumpkin garlic sauce to the pasta along with the rest of the oregano. Stir gently together to combine until all the pasta is coated in sauce.
Cook the pasta as instructed on the package. Once the pasta and the pumpkin is done cooking, drain the water away from the pasta and add the pasta to a large bowl.
Next, add the rest of the Caramelized pumpkin chunks and roasted peppers and toss to combine. Garnish with fresh basil and pumpkin seeds and serve.Enjoy.
