Cook the Noodles: Prepare the rice noodles according to the package instructions. Drain and set aside. Or if you’re using thin rice noodles simply:
Place the noodles in a deep pan or bowl and pour boiling water on top until the noodles are covered. Cover with a lid and leave the noodles to rest for 2-5 minutes. Once the noodles are ready, drain away the hot water while being careful not to burn yourself. Set the noodles aside. Sauté the Vegetables: In a large pan, heat the vegetable oil over medium heat. Add the sliced portobello mushrooms and cook for 2-3 minutes.
Add the Bell Peppers and Zucchini: Sauté for another 3-4 minutes until the vegetables are tender.
Add Garlic and Spring Onions: Stir in the chopped garlic and spring onions, and cook for 1-2 minutes until fragrant.
Season: Add a pinch of salt and pepper to taste.
Prepare the Tahini Sauce: In a small bowl, whisk together the sesame paste, warm water, tamari or soy sauce, lime juice, and sambal oelek chili paste until smooth.
Combine: Add the cooked noodles to the pan with the sautéed vegetables. Pour the tahini sauce over the noodles and toss to combine.
Serve: Divide the noodles into bowls and top with salted roasted cashew nuts and chopped fresh cilantro or basil.
