Here’s a delicious recipe for Devonshire cream, also known as clotted cream, to pair with your scones:
Devonshire scones cream Ingredients:
2 cups (480ml) heavy cream
2 tablespoons (30g) confectioners’ sugar (powdered sugar)
How to make Devonshire clotted cream for scones Instructions:
1. Preheat Your Oven:
Preheat your oven to 180°C (350°F).
2. Pour the Heavy Cream:
Pour the heavy cream into a shallow, ovenproof dish. Make sure the dish allows for a larger surface area rather than depth.
3. Bake in Water Bath:
Place the dish with the cream in a larger baking dish. Fill the larger dish with hot water to create a water bath for the cream.
4. Bake Low and Slow:
Bake in the preheated oven for about 1.5 to 2 hours. The cream should develop a thick, golden crust on top.
5. Cool and Refrigerate:
Allow the clotted cream to cool to room temperature. Once cooled, cover the dish and refrigerate for several hours or overnight.
6. Separate the Layers:
Carefully scoop out the thickened cream from the top, leaving the watery liquid at the bottom. Discard the liquid.
7. Whip the Clotted Cream:
In a mixing bowl, combine the clotted cream with confectioners’ sugar. Whip until the mixture is smooth and slightly fluffy.
8. Serve with Scones:
Transfer the whipped clotted cream to a serving bowl and enjoy with your freshly baked scones and a side of fresh fruits or fresh berries.
Note: The baking time can vary, and you might need to adjust based on your oven. The goal is to develop a golden crust on top of the cream while allowing it to thicken.

How to store scones

Proper storage is key to maintaining the freshness and texture of your scones. Here's how to store them:
1. Room Temperature:
   - If you plan to consume the scones within a day or two, store them at room temperature in an airtight container. Place them in a cool, dry area away from direct sunlight.
2. Refrigeration:
   - If your scones contain perishable ingredients like cream or fruit, it's advisable to store them in the refrigerator. Place the scones in an airtight container or sealable plastic bag to prevent them from drying out.
3. Freezing:
   - Scones freeze well, making them an excellent option for future enjoyment. Once completely cooled, wrap each scone individually in plastic wrap or aluminum foil and place them in a freezer bag. To thaw, leave them at room temperature or reheat in the oven.
4. Reheating:
   - To refresh day-old scones, you can warm them in the oven. Preheat your oven to a low temperature (around 300°F or 150°C), place the scones on a baking sheet, and heat for 5-10 minutes. This helps restore their warmth and freshness.
