  • 2 red bell peppers - thinly sliced
  • 2 Tbsp sesame seeds - 20 g
  • 3 Tbsp soy sauce or tamari - 45 ml
  • 2 Tbsp vegan Pad Thai sauce - 30 ml
  • 1 can coconut milk - 400 ml / 1 ¾ cups – full-fat for the creamiest texture
  • 1 small bunch fresh basil leaves - chopped (½ cup / 15 g)

Instructions

  • Preheat the oven to 220 °C / 425 °F. Line a baking tray with parchment or place a baking rack over it.
