Ingredients

  • 250 g (1 cup + 2 tbsp) unsalted butter - softened (or 2 sticks + 2 tsp)
  • 200 g (1 cup) granulated sugar
  • 1 large egg ≈ 50 g
  • 355 g (2 ¾ cups) all-purpose flour - spooned & leveled
  • 15 g (1 tbsp) vanilla sugar - or 1 packet
  • 1 vanilla bean - seeds scraped out (or 1 extra tbsp vanilla sugar)
  • Pinch of salt

Optional variations:

  • 30 g (¼ cup) finely ground almonds – for a nutty Danish flavor
  • 1 tsp grated lemon zest – adds a delicate citrus twist
  • Melted dark chocolate - 70–95% – for dipping
  • 1 tbsp pure vanilla extract – if substituting for vanilla sugar

Instructions

  • Prepare the butter

    Let butter soften at room temperature until very soft (not melted). If you’re short on time, warm it in 5-second bursts in the microwave.
  • Make the dough

    In a stand mixer with a paddle attachment, combine softened butter, sugar, egg, flour, vanilla sugar, vanilla bean seeds, and salt.
Mix on low speed for exactly 3 minutes. The dough should be smooth, soft, and slightly sticky. Don’t overmix — that’s the secret to tender cookies.
  • Pipe the cookies
    
Transfer the dough to a piping bag fitted with a large open star tip (10mm / ½ inch).
Pipe 10 cm (4-inch) strips onto parchment-lined baking sheets, then join the ends to form rings or “wreaths.”
Pro Tip: Hold the piping bag about one-third of the way down from the tip, not the top. It gives you better control and saves your arms!
  • Bake until golden
    
Bake in a preheated oven at 200°C (400°F) for 8–10 minutes, or until lightly golden around the edges.
  • Cool completely
    
Transfer baked cookies to a wire rack immediately after baking. They’ll crisp up beautifully as they cool.
  • Repeat
    
Continue piping and baking the remaining dough.

Storage
  • Store cooled cookies in an airtight tin for up to 3 weeks.
  • For longer storage, freeze for up to 3 months.
  • To gift, stack them between parchment layers in a decorative cookie tin or glass jar.
Tips for Perfect Vaniljekranse
  • Use soft, not melted, butter for the right texture.
  • Mix the dough for only 3 minutes – no more!
  • If the dough is too soft to pipe, chill the piping bag for 10 minutes.
  • Bake one sheet at a time for even browning.
  • For a gluten-free version, substitute a 1:1 gluten-free flour blend.
