Ingredients

  • 4 large Portobello Mushrooms
  • ½ cup All Purpose Flour use gluten-free flour for Gluten-free version
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika or regular paprika
  • ½ tsp Salt
  • ¼ tsp Ground Black Pepper
  • 2 Eggs (use 1/2 cup unsweetened almond milk for vegan version)
  • 1 cup Panko Breadcrumbs use gluten-free breadcrumbs, almond flour or crushed corn flakes for GF version
  • Cooking spray or 2 tbsp avocado oil

Instructions

  • Clean the portobello mushrooms and slice them into thin fries.
  • In a shallow bowl, whisk together the flour, garlic powder, paprika, salt, and black pepper.
    In a separate bowl, beat the eggs. (for vegan version, simply pour plant milk into a separate bowl)
  • Pour the Panko breadcrumbs into another bowl.
    Dip each mushroom fry in the flour mixture, then the eggs, and finally coat them with the Panko breadcrumbs.
  • Place the mushroom fries in the air fryer basket, making sure they are not overlapping.
    Spray the fries with cooking spray.
  • Cook at 375°F for 10-12 minutes, or until golden and crispy.
    Serve with your favorite dipping sauce and enjoy your delicious portobello mushroom fries!
    Note: each air fryer cooks differently, so you may need to adjust the cooking time accordingly. My air fryer cooks more slowly so I had to add 5 minutes extra to the cooking time.

Here is a simple and delicious vegan BBQ sauce recipe:
No liquid smoke plant based barbecue sauce Ingredients:
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tbsp tamari or soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
Directions:
  1. In a small bowl, whisk together all ingredients until well combined.
  2. Taste and adjust seasoning to your liking.
  3. Use immediately or store in an airtight container in the fridge for up to a week.
