Ingredients

  • 10oz (300g) Noodles or rice noodles if gluten free
  • 3 tbsp Olive Oil
  • 4 Apples Cut into wedges, pits removed
  • 3 Onions Cut into wedges
  • 2 cloves Garlic Finely chopped
  • 1 tbsp Curry Powder
  • 1 tbsp Dried Thyme
  • 1 tbsp Tamari or Soy Sauce
  • 2 tbsp Sesame Seeds
  • Salt and Pepper to taste

Instructions

  • Heat water to a boil and pour it over the noodles in a large mixing bowl. Cover with a lid and let the noodles cook.
  • Heat olive oil in a large pan and add the onions and apples. Let the onions and apples cook at medium high heat for 5-7 minutes while stirring occasionally. Once the onions start to go soft, add the minced garlic, curry powder, dried thyme and tamari sauce and combine. Let the dish cook a few more minutes before adding the sesame seeds.
  • Once the noodles are ready, drain away the excess water and add the noodles to the pan (or if your pan isn’t large enough, add the ingredients in the pan to the bowl) . Season with salt and pepper and mix everything to combine. Add extra salt if needed.
    Serve hot and enjoy.
