Equipment

  • 1 large microwave safe coffee mug or soup mug

Ingredients

Coffee cup cake recipe ingredients

  • ¼ cup (30g) all-purpose flour
  • ¼ cup (50g) white sugar or brown sugar
  • 2 1/2 tablespoons (15g) unsweetened cocoa powder
  • teaspoon (0.6g) baking soda
  • teaspoon (0.6g) salt
  • 3 tablespoons (45ml) milk regular or plant milk (soy milk, almond milk or cashew milk)
  • 2 tablespoons (30ml) canola oil, avocado oil or olive oil
  • 1 tablespoon (15ml) water
  • 1 teaspoon (5ml) vanilla extract

Instructions

How to make Coffee cup cake recipe Instructions:

  • Combine Dry Ingredients: In a large microwave-safe mug, mix together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
  • Add Wet Ingredients: Stir in the milk, canola oil, water, and vanilla extract until the mixture is smooth and all ingredients are well incorporated.
  • Microwave: Place the mug in the microwave and cook on high for about 1 minute and 30 seconds, or until the cake is cooked through in the center. Cooking times may vary based on your microwave, so check and adjust as necessary.

Notes

Variation:

Healthier Option: For a lighter version, substitute 1 1/2 tablespoons of plain unsweetened applesauce for the canola oil, and replace the milk with 3 tablespoons plus 1 teaspoon of water. This will reduce the fat content while still keeping the cake moist and delicious.

Coffee cup cake extra add-ins

Here are some extra add-in ideas to elevate your coffee cup cake:
    1.    Chocolate Chips: Stir in a handful of chocolate chips for a melty, chocolatey surprise with every bite.
    2.    Nuts: Chopped nuts like pecans, walnuts, or almonds add a delightful crunch and nutty flavor to your cake mix mug cake. Alternatively, you can mix in peanut butter for the fastest way to add a nutty crunch and flavor to your coffee mug cake.
    3.    Fruit: Fresh or dried fruit such as berries, bananas, or chopped apples can add sweetness and texture to your coffee cup cake.
    4.    Caramel Swirl: Drizzle caramel sauce into the batter and swirl it with a toothpick for a gooey, caramel-infused treat. It’s like a snickerdoodle mug cake and chocolate cake in one. Yum!
    5.    Cookie Crumbles: Crumble your favorite chocolate chip cookies on top of the batter before microwaving for a fun and delicious twist.
    6.    Spices: Add a pinch of cinnamon, nutmeg, or pumpkin pie spice for a cozy, aromatic flavor. It transforms this great recipe into a cinnamon roll mug cake meets chocolate cake deliciousness.
    7.    Nutella: Dollop Nutella into the center of the batter for a rich and indulgent chocolate-hazelnut surprise.
    8.    Marshmallows: Sprinkle mini marshmallows on top of the batter before microwaving for a gooey, s’mores-inspired treat.
    9.    Coconut Flakes: Toasted coconut flakes add a tropical flair and irresistible crunch to your coffee cup cake.
    10.    Espresso Powder: Enhance the coffee flavor by adding a teaspoon of instant espresso powder for an extra kick of caffeine all coffee lovers will appreciate. A little instant coffee powder is my favorite add-in in this easy dessert. It makes the simple mug cake a chocolate coffee cake wonder of fluffy cake deliciousness.
