Ingredients

  • 8-10 oz Noodles of your choice
  • 1 7 oz jar Oil packed Grilled Artichoke Hearts roughly chopped
  • 7-10 Oil packed Sundried Tomato halves Chopped
  • 4 tbsp Sesame Seeds
  • 1 tbsp Tamari or Soy Sauce
  • 1 bunch Fresh Cilantro or Fresh Basil chopped

1-minute vegan noodle sauce

  • ¼ cup Sesame Paste or Tahini or peanut butter if you don't have tahini
  • ¼ cup Hot Water
  • 3 tbsp Tamari or Soy Sauce
  • 1 tbsp Sesame Oil
  • 1 tsp Sriracha Sauce
  • 2 tsp Maple Syrup
  • 1 tsp Garlic Powder or 1 clove fresh garlic minced
  • Juice from 1 Lemon

Instructions

Noodle sauce

  • Add all the noodle sauce ingredients together in a jar. Place the lid on the jar and shake the sauce well.

Making the noodles

  • Prepare the noodles as instructed on the packaging. 
  • While the noodles are being prepared, heat a pan or skillet. Add the artichoke hearts and sun-dried tomatoes to the pan along with 1 tablespoon of the oil the sun-dried tomatoes were in. Pour in sesame seeds and let everything cook at medium-high heat while stirring occasionally. Once the sesame seeds turn golden, remove the pan from the heat. 
  • Drain the water from the noodles and pour the noodles into the pan with the artichokes. Pour the noodle sauce over the noodles and toss until the noodles are fully coated in noodle sauce and sesame seeds. Garnish with fresh basil and serve.
