Ingredients
8-10ozNoodlesof your choice
17 oz jarOil packed Grilled Artichoke Heartsroughly chopped
7-10Oil packed Sundried Tomato halvesChopped
4tbspSesame Seeds
1tbspTamari or Soy Sauce
1bunchFresh Cilantro or Fresh Basilchopped
1-minute vegan noodle sauce
¼cupSesame Paste or Tahinior peanut butter if you don't have tahini
¼cupHot Water
3tbspTamari or Soy Sauce
1tbspSesame Oil
1tspSriracha Sauce
2tspMaple Syrup
1tspGarlic Powderor 1 clove fresh garlic minced
Juice from 1 Lemon
Instructions
Noodle sauce
Add all the noodle sauce ingredients together in a jar. Place the lid on the jar and shake the sauce well.
Making the noodles
Prepare the noodles as instructed on the packaging.
While the noodles are being prepared, heat a pan or skillet. Add the artichoke hearts and sun-dried tomatoes to the pan along with 1 tablespoon of the oil the sun-dried tomatoes were in. Pour in sesame seeds and let everything cook at medium-high heat while stirring occasionally. Once the sesame seeds turn golden, remove the pan from the heat.
Drain the water from the noodles and pour the noodles into the pan with the artichokes. Pour the noodle sauce over the noodles and toss until the noodles are fully coated in noodle sauce and sesame seeds. Garnish with fresh basil and serve.
