  • To make this delicious low carb carrot cake recipe, you will need to gather all the necessary ingredients. Start by preheating your oven to 350°F. Next, prepare a 9-inch cake pan by lining it with parchment paper and greasing the sides with butter.
  • In a large bowl, combine the almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, whisk together the eggs, sweetener, vanilla extract, and melted coconut oil until well combined. Add the grated carrots and mix until evenly distributed.
  • Slowly add the dry ingredients to the wet ingredients and mix until well combined. Pour the batter into the prepared cake pan and smooth out the top with a spatula.

How to grate carrots without a grater
If you don't have a grater, you can still grate carrots using a few other methods:
  1. Food Processor - You can use a food processor to quickly grate the carrots. Simply cut the carrots into small pieces and pulse in the food processor until grated.
  2. Knife - You can also finely chop the carrots using a sharp knife.
  3. Mandoline Slicer - If you have a mandoline slicer, you can use it to slice the carrots thinly. Then, stack the slices and finely chop them to create grated carrots.
