In a shallow dish, mix together the olive oil, soy sauce, maple syrup, smoked paprika, garlic powder, salt, and pepper.
Add the carrot strips to the bowl and toss to coat them evenly with the marinade.Place the carrot strips in a single layer on a baking sheet lined with parchment paper.
