Preheat oven to 350F and line a baking sheet with baking parchment.
Add the ground flax seeds to a small mixing bowl and add 4 tbsp cold water to create the flax eggs.
In a large mixing bowl, mix together the almond flour, vanilla protein powder, vanilla powder, and baking soda.
In another mixing bowl, mix together the almond butter, tahini, applesauce, maple syrup and flax eggs. Add the dry ingredients to the wet ingredients and stir together. The texture should be like a regular thick cookie dough (if it’s too wet, mix in extra almond flour).
Next, use a spoon or ice cream scoop to scoop the cookie dough into large cookies. Place the cookies on the lined baking sheet and bake in the oven for 9-10 minutes or until the cookies are lightly golden on the outside. The cookies should be soft, chewy and delicious.
