Ingredients
2tbspOlive Oil
2cupsShredded Zucchinis
2cupsShredded Carrots
2Eggs
3clovesGarlicMinced
2tbspMild Curry Powder
1tbspDried Oregano
1tbspSambal Olekor other chili sauce
1tspSalt
1½cupPlain Flour
Instructions
Combine the shredded zucchinis and shredded carrots in a bowl and add the curry powder, dried oregano, sambal olek (chili sauce) and salt and stir to combine. Add the eggs to the mixture and mix until everything is combined. Finally, stir in the flour a little at a time until it has a dough like consistency.
Heat olive oil in a non-stick pan and use two spoons to shape the zucchini dough into fritters. Fry the fritters at medium heat for 3-5 minutes on each side or until the fritters are nice and golden on the outside. Serve the fritters with a cooling yogurt dip and enjoy.
