Ingredients

Wasabi Dressing

  • ¼ cup Vegan Mayonnaise or regular mayonnaise, if you prefer
  • 2 tbsp Wasabi
  • 1 tsp Miso Paste Vegan
  • 1 tbsp Lemon Juice
  • 1 tbsp Sweet Chili Sauce

Coleslaw

  • ½ cup Green Cabbage Sliced
  • 1 cup Edamame Beans fresh or frozen
  • 2 Avocados Sliced
  • ½ cup Bean Sprouts or mixed sprouts
  • ½ cup Canned Bamboo Shoots sliced
  • ½ cup Cooked Grains Can be brown rice, wild rice, or other grains
  • 1-2 Spring Onions Sliced

Instructions

For the dressing 

  • In a small bowl, mix vegan mayonnaise, wasabi, miso paste, lemon juice, and sweet chili sauce until everything is combined into a creamy wasabi dressing.

Making the Coleslaw

  • Shred or julienne cut your cabbage, and slice all the vegetables.
  • Grab a salad bowl and pour in the sliced cabbage, edamame beans, sliced avocados, sprouts, sliced bamboo shoots, cooked grains, and spring onions.
  • Drizzle wasabi mayonnaise over the salad and toss to coat all the vegetables with dressing.
    Serve and enjoy.
