Wasabi Dressing
- ¼ cup Vegan Mayonnaise or regular mayonnaise, if you prefer
- 2 tbsp Wasabi
- 1 tsp Miso Paste Vegan
- 1 tbsp Lemon Juice
- 1 tbsp Sweet Chili Sauce
Coleslaw
- ½ cup Green Cabbage Sliced
- 1 cup Edamame Beans fresh or frozen
- 2 Avocados Sliced
- ½ cup Bean Sprouts or mixed sprouts
- ½ cup Canned Bamboo Shoots sliced
- ½ cup Cooked Grains Can be brown rice, wild rice, or other grains
- 1-2 Spring Onions Sliced
For the dressing
In a small bowl, mix vegan mayonnaise, wasabi, miso paste, lemon juice, and sweet chili sauce until everything is combined into a creamy wasabi dressing.
Making the Coleslaw
Shred or julienne cut your cabbage, and slice all the vegetables.
Grab a salad bowl and pour in the sliced cabbage, edamame beans, sliced avocados, sprouts, sliced bamboo shoots, cooked grains, and spring onions.
