Ingredients

  • 2 cups Apples Grated
  • 1 cup Non-dairy Milk Almond milk or cashew milk works best
  • ½ cup Unsweetened Applesauce
  • ¾ cup Coconut Sugar
  • 2 tsp Vanilla Extract
  • 2 cups Quick Cooking Rolled Oats Gluten-free and Blended into fine flour
  • 2 tsp Baking Powder
  • 3 tsp Cinnamon Powder
  • tsp Ginger Powder
  • Pinch of salt
  • Juice from ½ Lemon
  • ¾ cups Walnuts Chopped
  • 1-2 tbsp Brown Sugar or coconut sugar for topping Optional

Instructions

  • Preheat oven to 350F and line and grease muffins baking tins. 
  • Add the non-dairy milk, applesauce, vanilla extract and coconut sugar to a mixing bowl and stir to combine. 
  • n another bowl, combine the oat flour with the baking powder, cinnamon, ginger and salt. Stir together until all the dry ingredients are blended. 
  • Next, pour the wet ingredients into the dry ingredients and mix gently together until it forms a wet dough. Fold in the chopped walnuts and shredded apples until everything is mixed. Pour the muffins batter into the greased muffins tins (don’t fill them all the way up). 
  • Sprinkle brown sugar or coconut sugar on top of the muffins (optional).
  • Bake the muffins in the oven for 12-15 minutes or until a toothpick cleanly comes out of the center of the the muffins. 
    Remove the muffins from the oven and let them cool before serving.
