Ingredients
2cupsApplesGrated
1cupNon-dairy MilkAlmond milk or cashew milk works best
½cupUnsweetened Applesauce
¾cupCoconut Sugar
2tspVanilla Extract
2cupsQuick Cooking Rolled OatsGluten-free and Blended into fine flour
2tspBaking Powder
3tspCinnamon Powder
1½tspGinger Powder
Pinch of salt
Juice from ½ Lemon
¾cupsWalnutsChopped
1-2tbspBrown Sugar or coconut sugar for toppingOptional
Instructions
Preheat oven to 350F and line and grease muffins baking tins.
Add the non-dairy milk, applesauce, vanilla extract and coconut sugar to a mixing bowl and stir to combine.
n another bowl, combine the oat flour with the baking powder, cinnamon, ginger and salt. Stir together until all the dry ingredients are blended.
Next, pour the wet ingredients into the dry ingredients and mix gently together until it forms a wet dough. Fold in the chopped walnuts and shredded apples until everything is mixed. Pour the muffins batter into the greased muffins tins (don’t fill them all the way up).
Sprinkle brown sugar or coconut sugar on top of the muffins (optional).
Bake the muffins in the oven for 12-15 minutes or until a toothpick cleanly comes out of the center of the the muffins. Remove the muffins from the oven and let them cool before serving.
