Original recipe:

  • 6 leeks 5 for the soup, 1 for the garnish
  • 8 Cups of Water

My added zero calories ingredients twist:

  • 3 cloves of garlic
  • 1 teaspoon thyme fresh or dried
  • 1 star anise seed
  • 1/2 teaspoon salt
  • 1/3 teaspoon ground black pepper
  • 1 bunch fresh basil chopped (garnish)

Instructions

French leek soup Preparation

    Peel, Clean, and Chop the Leeks:

    • - Discard the dark green tops.
    • - Chop 5 of the leeks into large pieces for the soup.
    • - Slice 1 leek into fine half-rounds for the garnish.

    Cooking Instructions

      Heat the Soup Pot:

      • - Heat a tablespoon of water in a soup pot over medium heat.

      Sauté the Leeks and Garlic:

      • - Add the chopped garlic and the 5 large-chopped leeks to the pot.
      • - Sauté for about 5 minutes until the leeks become translucent, stirring frequently to prevent burning.

      Season the Soup:

      • - Add salt, thyme, black pepper, star anise, and half of the basil to the pot.

      Add Water and Simmer:

      • - Pour in 8 cups of water.
      • - Let the soup simmer for 30 minutes, stirring occasionally, until the leeks are completely soft.
      • - Taste the broth and adjust seasoning with additional salt or pepper if needed.

      Blend the Soup: (optional)

      • - Remove the star anise seed from the broth to avoid blending it.
      • - Use an immersion blender to puree the soup until smooth. Puree half if you want a bit of bite to your soup. Or don't puree at all if you like a broth-type soup with veggies.
      • - If the soup is too thick, you can add up to 2 additional cups of water, one cup at a time, until the desired consistency is reached.

      Preparing the Garnish

        Cook the Garnish Leeks:

        • - Drizzle ½ tablespoon of water in a frying pan over medium heat.
        • - Add the finely chopped leek reserved for the garnish and a pinch of fleur de sel.
        • - Cook, stirring frequently, for about 10 minutes. Add ¼ cup of water halfway through to steam the leeks. Be careful not to let them burn. If they begin to stick and turn dark brown, add a little more water and lower the heat.

        Finish the Garnish:

        • - Continue cooking until the leeks are translucent and soft.
        • - Taste and add a bit more salt if needed. The sautéed leeks should be nutty and slightly sweet.

        How to Serve French Leek Soup

          Serve the Soup:

          • - Spoon the Magical Leek Soup into bowls.
          • - Top each bowl with a tablespoon of the sautéed leeks and some fresh basil.

          The regimen is quite straightforward: For two days (48 hours) you drink the leek broth every 2-3 hours, one cup at a time, either reheated or at room temperature, according to your preference. For that meal, you can enjoy a small portion of meat or fish or a plant based alternative for a vegetarian diet (4-6 ounces—don't put away your kitchen scale just yet!), accompanied by two steamed vegetables lightly seasoned with butter or oil, and a piece of fruit.
