Greek salad with lettuce Ingredients:
For the Salad:
- 8 cups (900g) chopped Romaine lettuce
- 1 ½ cups (360g) cherry tomatoes halved (or large juicy tomatoes, sliced)
- 1 ½ cups (240g) cucumber sliced
- 1 cup (150g) red onion thinly sliced
- 1 cup (150g) Kalamata olives pits removed
- 1 cup (150g) crumbled feta cheese
For the Greek Salad Dressing:
- ½ cup (120ml) extra-virgin olive oil
- ¼ cup (60ml) red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1 clove garlic minced
- 1 teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
