Greek salad with lettuce Ingredients:

For the Salad:

  • 8 cups (900g) chopped Romaine lettuce
  • 1 ½ cups (360g) cherry tomatoes halved (or large juicy tomatoes, sliced)
  • 1 ½ cups (240g) cucumber sliced
  • 1 cup (150g) red onion thinly sliced
  • 1 cup (150g) Kalamata olives pits removed
  • 1 cup (150g) crumbled feta cheese

For the Greek Salad Dressing:

  • ½ cup (120ml) extra-virgin olive oil
  • ¼ cup (60ml) red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Add the tomatoes, cucumber, bell pepper, red onion and olives to a salad bowl.
  • Drizzle olive oil and balsamic vinegar over and season with salt, pepper and oregano. Mix together until everything is combined.
  • Finally, add the chopped fresh basil and crumble Feta cheese on top. 
    Serve with a side of bread and enjoy.
