Ingredients

For the salad:

  • 2 ripe avocados - pits and skins removed, diced (about 2 cups / 300 g)
  • 3-4 ripe peaches - pits removed, thinly sliced (about 2 cups / 320 g)
  • 1 large grapefruit - peel and white pith removed, diced (about 1½ cups / 230 g)
  • 1 bunch fresh parsley - cilantro, or basil, chopped (about ½ cup / 20 g)

For the dressing:

  • 3 tablespoons sweet chili sauce - 45 ml
  • 1 tablespoon avocado oil or olive oil - 15 ml
  • 1 tablespoon lemon juice or lime juice - 15 ml
  • teaspoon salt

Instructions

  • Make the dressing:

In a small bowl or jar, whisk together the sweet chili sauce, avocado oil, citrus juice, and salt. Set aside.
  • Prepare the fruit:

Slice the peaches into thin wedges. Remove the peel and white pith from the grapefruit and cut it into cubes. Dice the avocados into bite-sized pieces.
  • Assemble the salad:

Add the peaches, grapefruit, and avocado to a large bowl. Pour the dressing over and toss gently to coat everything evenly.
  • Add herbs:

Sprinkle chopped parsley, cilantro, or basil on top and toss one final time.
  • Serve and enjoy:

Serve immediately or chill for 10–15 minutes for an even more refreshing summer fruit salad with avocado.

Notes

Pro Tips

  • For best flavor, use ripe but firm peaches and avocados.
  • To prevent avocado from browning, toss cubes in extra lemon or lime juice before mixing.
  • Chill the dressing for 15 minutes before pouring — it helps everything stay crisp and fresh.

Variations

  • Grilled Peach Avocado Salad: Grill peach slices for 2–3 minutes per side for smoky sweetness.
  • Mediterranean Twist: Add crumbled feta or vegan cheese, red onions, and roasted pumpkin seeds.
  • Spicy Peach Avocado Salsa: Swap parsley for cilantro, add a chopped jalapeño, and serve with tortilla chips.
  • Protein Boost: Add quinoa, grilled tofu, or chickpeas for a full meal.

Storage

Best enjoyed fresh. Leftovers can be stored in an airtight container in the fridge for up to 1 day.
