Chinese eggplant with garlic sauce Ingredients:

  • 2 Chinese eggplants about 400g, sliced into bite-sized pieces
  • 3 tablespoons (45ml) soy sauce
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) hoisin sauce
  • 1 tablespoon (15ml) sesame oil
  • 1 tablespoon (15g) cornstarch
  • 1 tablespoon (15ml) vegetable oil
  • 4-5 cloves garlic minced
  • 1 tablespoon (12g) ginger minced or finely grated
  • 2 green onions sliced (for garnish)
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Sesame seeds for garnish optional

Instructions

How to cook Chinese eggplant

  • In a bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sesame oil, cornstarch, and sugar. Set aside.
  • Heat vegetable oil in a pan over medium-high heat. Add minced garlic and ginger, sautéing for about 30 seconds until aromatic.
  • Add the sliced eggplant to the pan, stirring frequently to coat them in the garlic and ginger.
  • Once the eggplant begins to soften (about 5-7 minutes), pour the sauce over it. Continue to cook, stirring occasionally, until the eggplant is tender yet still holds its shape.
