Ingredients

Homemade Tortillas (optional)

  • 3 cups all-purpose flour or gluten-free flour blend
  • 2 tsp baking powder
  • tsp kosher salt
  • 1 tsp dried thyme
  • 5 tbsp vegan butter or coconut oil
  • 1 cup hot water

Apple & Onion Filling

  • 2 tbsp coconut oil
  • 2 large onions - thinly sliced
  • 6-8 apples - cored and sliced
  • 2 cloves garlic - chopped
  • 1 tsp dried thyme
  • Pinch of salt - to taste
  • ¼ tsp freshly ground black pepper

For Serving

  • Soy yogurt or plant-based yogurt of choice
  • 1 handful Fresh cilantro or basil - chopped
  • Sweet chili sauce

Instructions

Make the Homemade Tortillas

  • In a bowl, whisk together flour, baking powder, thyme, and salt.
  • Add vegan butter or coconut oil, then pour in the hot water. Stir until a shaggy dough forms.
  • Knead 1–2 minutes on a floured surface until smooth. Cover and rest for 10 minutes.
  • Divide into 12–14 pieces and roll each into an 8-inch circle.
  • Heat a skillet over medium-high. Lightly oil, then cook each tortilla for 30–60 seconds per side, until lightly golden. Keep warm under a towel.

Prepare the Apple & Onion Filling

  • In a large skillet, melt coconut oil over medium heat.
  • Add sliced onions and cook 10–12 minutes, stirring occasionally, until golden and soft.
  • Add apples, garlic, thyme, salt, and pepper. Cook another 5–7 minutes until apples are tender but not mushy.
  • Taste and adjust seasoning. Remove from heat.

Assemble the Savory Tortillas

  • Warm your tortillas.
  • Spoon apple-onion filling down the center of each tortilla.
  • Top with yogurt, chopped herbs, and a drizzle of sweet chili sauce.
