Ingredients

Easy Lau Thai recipe Ingredients:

  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 2 tablespoons Red Curry Paste or tom yum paste, or mild chili paste
  • 2 tablespoons Soy Sauce or Tamari
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Grated Fresh Ginger
  • 1 tablespoon Minced Garlic
  • 1 block Firm Tofu cubed or sliced
  • 2 Baby Bok Choy sliced - or other leafy vegetables
  • 2 Red Bell Peppers sliced
  • 2 medium Carrots thinly sliced
  • 1/1 cup Snap Peas
  • 1/2 cup Water Spinach optional
  • 1/4 cup Fresh Cilantro or Fresh Basil Chopped
  • 1 Lime cut into wedges
  • Cooked rice or noodles for serving

Instructions

How to make Lau Thai Instructions:

  • In a large pot, whisk together the coconut milk, vegetable broth, red curry paste, soy sauce, brown sugar, ginger, and garlic. Bring the mixture to a simmer over medium heat.
  • Add the tofu and vegetables to the pot and stir until everything is well combined.
  • Let the mixture simmer for about 10-15 minutes, or until the vegetables are tender and the tofu is heated through.
    Remove the pot from the heat and stir in the chopped cilantro.
    Serve the Lau Thai over a bed of cooked rice and enjoy.
