Ingredients

  • 1 tbsp Olive Oil
  • 2 Zucchinis Sliced thinly
  • 2 15-oz cans Black Beans Rinsed and drained
  • 2 cloves Garlic Finely chopped
  • 5-8 Sun dried Tomatoes Chopped
  • 2 tbsp Sesame Seeds
  • 2 tsp Curry Powder
  • 1 tbsp Greek Spice Mix
  • 2 tsp Dried Thyme
  • Salt to taste
  • 1 bunch Fresh Parsley Chopped

Instructions

  • Heat olive oil in a frying pan and add the sliced zucchinis. Let the zucchinis cook at medium high heat while stirring occasionally until they are starting to turn golden. Season with salt, thyme and curry powder and stir together.
  • Add the sesame seeds and let everything fry for 1 more minute, before adding the black beans and sun-dried tomatoes.
  • Season the salad with the greek spice mix and add extra salt if needed. Finally add the fresh parsley and mix together to combine. Pour the salad into a salad bowl and serve.
