Ingredients

  • 8 slices of bread preferably whole wheat or multigrain, cubed
  • 1 cup (100g) of shredded vegetarian cheese cheddar cheese, mozzarella cheese, or your choice - I like to top with plenty of cheese, using 2-3 of my favorite vegan cheeses
  • 1 cup (200g) of diced vegetables 1 bell pepper, 1/2 onion, 1/2 cup spinach - before chopping, 1/2 cup mushrooms - before chopping, etc.
  • 6 large eggs for vegan version you can use just egg
  • 1 cup (2,37dl) of milk dairy or plant-based
  • 1 teaspoon of dried Italian seasoning or thyme or basil
  • ½ tsp Salt
  • tsp Ground Black Pepper
  • Cooking spray or oil for greasing the air fryer basket

Instructions

How to make vegetarian air fryer breakfast casserole Instructions:

  • Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  • In a large bowl, combine the cubed bread, shredded cheese, and diced vegetables. Toss them together until well mixed.
  • In a separate bowl, whisk together the eggs, milk, dried herbs, salt, and pepper until well combined.
  • Pour the egg mixture over the bread and vegetable mixture. Gently stir until all the ingredients are evenly coated and the bread is soaked in the mixture.
  • Lightly grease the air fryer basket with cooking spray or oil to prevent sticking.
  • Transfer the mixture to an oven-safe dish or a suitable-sized baking pan that fits in your air fryer basket. Spread it out evenly.
