2cupsCarrotsPeeled and Sliced
215oz cansButter BeansRinsed and drained
1Red OnionDiced
2cupsGreen Cabbageor kale, Sliced
5clovesGarlicMinced
2tbspSmoked Paprika
2tspThymeFresh or dried
1tspDried Basil
1tspSea salt or Kosher Salt
½tspDried Chili Flakes
3-5Bay leaves
2cupsVegetable Stock
215oz cansCanned chopped Tomatoes
1bunch Fresh Basil or ParsleyChopped (for garnish)
Instructions
Cooking on a stove
Heat olive oil in a medium or large pot. Add the sliced carrots and cabbage and let them cook for a few minutes while stirring occasionally. Add the diced onions and season with all the spices and salt. Cook for 1-2 minutes before pouring in the minced garlic.
Pour in the vegetable stock and canned crushed tomatoes. Mix everything together and turn the heat down to a simmer. Place a lit on top of the pot and let the stew cook for 15-20 minutes.
Once the cabbage is soft and silky and the carrots are tender the stew is ready.Serve with a side of fluffy rice or couscous and top with fresh basil or parsley.Enjoy.
Cooking in an instant pot
Place all the ingredients in your instant pot or pressure cooker. Set to high for 20-minutes. Release steam. Taste test and add more seasoning if needed.
