Ingredients
2tbspOlive Oil
1cupCooked Couscous
2ApplesSliced
2largeTomatoesSliced
2Red Bell PeppersSliced
1Red OnionCut into wedges
½cupVegan CheeseVegan Mozzarella or vegan cheddar
1tbspOregano
1tbspSmoked Paprika
2tspThyme
4tbspGreen PestoVegan
Instructions
Cook the couscous as instructed on the package, but add 2 tablespoons green pesto, and a pinch of salt and pepper. Once the couscous is done, fluff it with a fork.
Preheat oven to 400F.
Add all the sliced vegetables to a deep baking dish and season with paprika, oregano, thyme, salt, and pepper. Top with the couscous and drizzle with olive oil. Use a spoon or fork to mix a little bit (not too much as you want the couscous to cover the veggies like a lid).
Sprinkle the cheese on top and cover the dish with tin foil or a lid.Bake in the oven for 25-30 minutes. Remove the lid for the last 5 minutes of cooking to make the cheese golden and lightly crispy.Serve with a garnish of fresh basil and enjoy.
