Ingredients

  • 2 tbsp Olive Oil
  • 1 cup Cooked Couscous
  • 2 Apples Sliced
  • 2 large Tomatoes Sliced
  • 2 Red Bell Peppers Sliced
  • 1 Red Onion Cut into wedges
  • ½ cup Vegan Cheese Vegan Mozzarella or vegan cheddar
  • 1 tbsp Oregano
  • 1 tbsp Smoked Paprika
  • 2 tsp Thyme
  • 4 tbsp Green Pesto Vegan

Instructions

  • Cook the couscous as instructed on the package, but add 2 tablespoons green pesto, and a pinch of salt and pepper. Once the couscous is done, fluff it with a fork. 
  • Preheat oven to 400F.
  • Add all the sliced vegetables to a deep baking dish and season with paprika, oregano, thyme, salt, and pepper. Top with the couscous and drizzle with olive oil. Use a spoon or fork to mix a little bit (not too much as you want the couscous to cover the veggies like a lid). 
  • Sprinkle the cheese on top and cover the dish with tin foil or a lid.
    Bake in the oven for 25-30 minutes. Remove the lid for the last 5 minutes of cooking to make the cheese golden and lightly crispy.
    Serve with a garnish of fresh basil and enjoy.
