Follow the initial steps in the recipe to prepare the pretzel dough: Mix the yeast and sugar in a large mixing bowl. Pour in the hot water and stir until the yeast dissolves. Let it rest for 10 minutes until the yeast becomes foamy. Next, add the flour and melted vegan butter, stir together, and knead the dough for 3-5 minutes until it forms a firm dough. Shape it into a ball and cover with a clean towel. Set aside to rise for 1 hour at room temperature.
Once the dough has risen (doubled in size), cut it into 8 equal pieces. Roll each piece into a rope, approximately 17 inches (43 cm) long, and twist them into pretzel shapes.
Preheat your air fryer to 375°F (190°C) for a few minutes.
Prepare the baking soda bath by heating a large pot filled with 4 cups of very hot water. Once it starts to boil, add the baking soda and gently stir.
Now, carefully place one of the pretzels on the air fryer's slotted basket or tray. Dip it into the baking soda water for 5 seconds, making sure it's coated.
Remove the pretzel from the water and place it back on the air fryer basket or tray. Sprinkle rock salt on top of the pretzel.
Repeat the process with the remaining pretzels, making sure to leave enough space between them on the air fryer tray for even cooking.
