I call this the best spicy vegan quinoa tacos recipe because in my humble (and may be slightly biased) opinion they really are the best. These plant-based tacos are good enough to serve to all your regular tacos-loving friends and family. Imagine smoky, spicy, and saucy vegan tacos meat piled high with crunchy peppers, fresh herbs, and maybe even a quick tomato salsa. I have no words to describe just how tasty these plant-based tacos are. But I can almost guarantee it’s a recipe that you will be making on repeat.

Ingredients

Meatless Taco Filling

  • 1 tbsp Avocado Oil or Olive Oil
  • 1 pound (450g) Cooked Quinoa Regular or black
  • 2 Portobello Mushrooms Chopped
  • 1 Yellow Bell Pepper Diced
  • 1 Red Bell Pepper Diced
  • 1 tbsp Ground Cumin
  • 2 tbsp Sweet Chili Sauce
  • 1 tbsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • ½ tsp Salt more to taste
  • 2 tbsp Organic Ketchup

For the Tacos

  • 8 Tortillas Almond flour or cassava
  • 1 Avocado Sliced (optional)
  • Vegan Shredded Cheddar Violife or your preferred vegan cheese
  • Dairy Free Sour Cream such as Kite Hill or Follow Your Heart
  • 1 bunch Fresh Cilantro or Fresh Basil Chopped

Instructions

Making the tacos filling

  • Heat avocado oil in a large skillet and add the chopped portobello mushrooms. Cook the mushrooms at medium-high heat while stirring occasionally for 3-5 minutes or until they start to go soft. Next, add the cooked quinoa, diced bell peppers, and all the seasonings. Mix and let it simmer for 3-5 minutes. Turn the heat down to low while you prepare the tacos.

Heating tortillas in a microwave 

  • Place the tortillas on a microwave-safe plate. Scrunch together a piece of baking parchment and dip it underwater. Place the damp paper over the tortillas and heat them for 1 minute in the microwave. Be careful when you remove it from the oven, so you don’t burn yourself. 

Heating tortilla in a pan

  • Heat avocado oil in a non-stick pan or skillet and add the tortillas one at a time. Cook each tortilla for 15-30 seconds on each side; the tortilla should puff up and turn lightly brown. Remove the cooked tortilla from the heat and place it on a paper towel. Once all the tortillas are cooked, you are ready to assemble your tacos.

Assembling your tacos

  • Assemble the tacos by loading your tortilla shells with the quinoa meatless meat, topped with avocado slices, pepper slices, a drizzle of vegan sour cream, and a garnish of fresh basil or cilantro.
    Serve and enjoy.
