Ingredients

Tortang Talong recipe ingredients

  • 4 Chinese eggplants
  • 4 small eggs - or 8-10 tbsp plant milk mixed with a tablespoon corn starch or tapioca
  • 3-4 tablespoons vegetable oil for frying
  • 1 large onion - diced
  • 3 cloves garlic - minced
  • 1/2 teaspoon salt
  • 1/3 teaspoons ground black pepper

Optional Garnish:

  • Fresh cilantro or basil - Chopped
  • Chili sauce

Instructions

Grilling Eggplants for Traditional Tortang Talong:

  • Pierce the eggplants with a fork to create small holes. Roast the eggplants directly over the stove flame until they become soft and the skin is charred or blackened. Remove from heat and allow them to cool.
  • Once cooled, peel off the charred skin from the roasted eggplants.

Making Tortang Talong Without Grilling:

  • Begin by peeling the eggplants. Bring a pot of water to a boil, then add the peeled eggplants. Boil for 5-7 minutes, adjusting the time based on the size of the eggplants, until they are tender.

How to steam Tortang Talong in microwave

  • Begin by peeling the eggplants. Place the peeled eggplants in a microwave safe bowl and add a bit of water to the bottom of the bowl.
  • Microwave on high for two minute intervals. Turn the eggplants carefully over in the bowl and microwave again. Keep microwaving for 8-10 minutes total or until the eggplants are tender and easy to mash with a fork.

Cooking the Eggplant Omelette:

  • In a shallow bowl or plate, beat one egg. Stir in some chopped onion and garlic. (For a vegan option: whisk together plant milk with cornstarch or tapioca until well combined, then add the chopped onion and garlic. Follow the same cooking instructions.)
  • Flatten the boiled or grilled eggplant with a fork or spatula, then dip it into the egg mixture, ensuring all sides are fully coated. Season with salt and pepper to taste. Repeat with the remaining eggplants.
  • Heat oil in a pan over medium heat. Pan-fry the eggplants until golden brown. Scoop additional egg mixture onto the top before flipping them. Once cooked, carefully transfer to a plate.
  • Serve the Tortang Talong over rice with your preferred dipping sauce. Garnish with fresh herbs and enjoy.

Alternative Ways to Cook Eggplant
Grilling: In the Philippines, the traditional method for cooking eggplant involves grilling it over hot coals until the flesh softens and the skin turns charred or dark. The charcoal smoke imparts a smoky flavor to the eggplant.
Baking: Another option is to bake the eggplant at 350°F for 45 minutes to an hour, depending on its size. Before baking, poke a few holes in the eggplant using a fork. Place the eggplants directly on the center oven rack and bake until they become tender.
Stovetop: For a more convenient approach, especially in places where barbecuing isn't allowed, you can roast the eggplant directly over the flame of a gas stove or on an electric stove. Just be sure to place a grill screen on top of your gas or electric burner.
Flavor variations
Here are some delicious flavor variations and seasoning ideas to elevate your Tortang Talong:
1. Cheesy Tortang Talong:
   - Add grated cheese like cheddar, mozzarella, or queso de bola (Edam cheese) into the egg mixture for a rich, gooey texture that melts into the eggplant.
2. Herb-Infused Tortang Talong:
   - Mix fresh herbs like basil, parsley, or thyme into the egg mixture. These herbs add a fragrant and aromatic layer of flavor that pairs beautifully with the smoky eggplant.
3. Spicy Tortang Talong:
   - Stir in chopped chili peppers, such as Thai bird's eye chilies or jalapeños, into the egg mixture or sprinkle crushed red pepper flakes. This adds a fiery kick to the dish, perfect for those who love some heat.
4. Garlic Butter Tortang Talong:
   - Sauté the garlic in butter before adding it to the egg mixture. This adds a rich, buttery flavor to the dish, making it extra indulgent.
5. Asian-Inspired Tortang Talong:

6. Tortang Talong with Vegetables:
   - Add finely chopped vegetables like bell peppers, tomatoes, or spinach to the egg mixture. This not only adds color but also boosts the nutritional value and flavor.
7. Curry-Spiced Tortang Talong:
   - Mix in a teaspoon of curry powder, turmeric, or garam masala into the egg mixture for an earthy, aromatic twist. This gives the dish a unique flavor profile reminiscent of South Asian cuisine.
8. Smoky Paprika Tortang Talong:
   - Add smoked paprika or chipotle powder to the egg mixture for an extra smoky flavor that complements the grilled eggplant perfectly.
9. Sweet and Savory Tortang Talong:
