  • 1 teaspoon grated ginger

For Quick Pickled Vegetables:

  • 1 large carrot julienned
  • 1 daikon radish julienned - or regular radish
  • 1/2 cup (120ml) rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • For the Vegan Sriracha Mayo: alternatively use the Vegan Banh Mi Sauce
  • 1/2 cup (120g) vegan mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon lime juice

For Assembly:

  • Baguette or banh mi rolls
  • Fresh cilantro sprigs
  • Thinly sliced cucumber
  • Jalapeño slices optional for extra heat
