Ingredients

  • 2 tbsp Vegetable Oil such as olive oil or avocado oil
  • 4 medium Russet Potatoes or other large potato
  • ½ tsp Salt
  • Pinch of Pepper
  • 1 tsp Garlic Powder optional

Mediterranean vegetables 

  • 2 cups Cherry Tomatoes
  • 2 Red Bell Peppers cut into chunks
  • 2 Yellow Onions roughly sliced
  • 2-3 tbsp Capers chopped
  • 2 tsp Oregano dried or fresh
  • 1 tsp Thyme dried or fresh
  • 1 tsp Dried Basil
  • ½ tsp Salt
  • 1 cup Fire-Roasted Canned Tomatoes

Instructions

Making jacket potatoes in an air fryer

  • Start by rinsing your potatoes and lightly padding them dry with a clean towel.
  • Poke the potatoes all over with a fork to allow the heat to go into the potatoes more easily. Lightly brush the potatoes with vegetable oil. Season with salt and pepper and place in the air fryer basket.
  • Cook the potatoes at 400F (200celcius) for 25 minutes. Be careful not to burn yourself, use a pair of tongs to turn the potatoes over and cook in the air fryer for another 15 minutes or so.

Making jacket potatoes in the microwave step-by-step

  • Start by rinsing your potatoes and lightly padding them dry with a clean towel. Poke the potatoes all over with a fork to allow the heat to go into the potatoes more easily.
  • Place your potatoes on a microwave-safe plate and lightly brush with vegetable oil. Season with salt and pepper and cook in the microwave for 4-5 minutes.
  • Being careful not to burn yourself, gently flip the potatoes over using a tong and cook another 4-5 minutes.
  • Use a fork or a knife to test when the potatoes are cooked all the way through to a fluffy and tender baked potato. Keep cooking the potatoes for 2-3 more minutes until they are tender all the way through
  • Once the baked potatoes are cooked all the way through, remove them from the microwave and top with the Mediterranean roasted vegetables, fresh herbs, and a dollop of sauce or dressing of your choice.

Making the Mediterranean vegetables 

  • Heat olive oil in a non-stick pan and add onions, tomatoes, and bell peppers. Let the vegetables sauté for 5-7 minutes at medium-high heat while stirring occasionally. 
  • Once the onions begin to soften and lightly brown at the edges, season with salt, pepper, oregano, thyme, basil, and capers. Mix everything and pour in the canned Tomatoes.
  • Bring the sauce to a quick boil then turn the heat down to a simmer. Leave to simmer for 10 minutes or until the jacket potatoes are ready.
