Ingredients
Meatballs
¾cupBrown Lentils
3Garlic ClovesMinced
1cupRolled OatsOptionally Gluten free oats
2tbspSweet and Sour Chili Sauce
1tbspBBQ Sauce
¼cupGrated CheeseOptionally vegan cheese
3tbspGrated ParmesanOptionally vegan
1tspDried Oregano
1tspDried Basil
Pinch of salt
Pinch of Pepper
Simple Italian Sauce
2cansChopped Tomatoes
½OnionChopped
2Garlic ClovesMinced
1tbspSweet and Sour Chili Sauce
Pinch of salt
Pinch of Pepper
1 bunchFresh BasilRoughly chopped
Instructions
Meatballs
Cook the lentils as instructed on the package. Once the lentils are cooked until they are tender (not mushy) drain away the water.
Preheat oven to 400F.
Pour the cooked lentils into a food processor and add all the rest of the ingredients. Blend until everything is mixed.
Roll the mixture into 1-2 inch meatballs
Place the meatballs on a baking sheet and brush or spray with olive oil. Bake in the oven for 20 minutes, turning them halfway through.
Sauce
Heat a sauté pan with olive oil and add the onions. Cook the onions at medium high heat for 5 minutes while stirring. Add the minced garlic and let it cook for a few more minutes.
Pour in the chopped tomatoes and season with salt and pepper. Reduce to a simmer and add the fresh basil.
Once the meatballs are cooked, gently place them in a pan and pour the sauce on top.
