Vegetarian Irish Stew with Dumplings Ingredients:
For the Stew:
- 2 tablespoons (30ml) olive oil or other vegetable oil
- 1 large onion diced
- 2 cloves garlic minced
- 4 medium carrots peeled and sliced
- 3 large potatoes peeled and diced
- 2 medium parsnips peeled and sliced
- 1 leek sliced
- 4 cups (1l) vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon Salt and pepper adjust to taste
- 1 cup (150g) green peas (fresh or frozen)
For the Dumplings:
- 2 cups (240g) all-purpose flour use gluten free flour for gluten free dumplings
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup (60g) unsalted butter cold and diced (regular or vegan butter)
- 3/4 cup (180ml) milk regular or plant milk
- 1 cup (150g) finely chopped mixed vegetables (carrots, peas, and corn work well)
- Optional: 2 tablespoons nutritional yeast and 2 teaspoons Italian herb seasoning for making cheddar herb dumplings
