Pomegranate Aperol Cocktail Ingredients
- 3 oz Aperol
- 1 to 2 oz pure - unsweetened pomegranate juice
- 4 oz vegan-certified prosecco or dry sparkling wine - chilled
- 1 splash of club soda
- 1 fresh orange wedge
- 1 tbsp fresh pomegranate arils - optional, for garnish
- 1 sprig of fresh rosemary - optional, for garnish
- Ice cubes
Fill a large white wine glass halfway with clean, solid ice cubes.
Pour the Aperol and pure pomegranate juice directly over the ice. Stir gently for 5 seconds to chill and fully integrate the flavor base.
Slowly pour the chilled prosecco into the glass, then finish with a quick splash of club soda to lift the carbonation.
Gently squeeze the fresh orange wedge over the drink and drop it in. Slap the fresh rosemary sprig firmly between your palms to release its aromatic oils, then tuck it into the glass along with a scattered spoonful of fresh pomegranate arils. Enjoy immediately!
* For an Inclusive Mocktail: Replace the Aperol with a zero-proof bitter apéritif alternative, and swap the prosecco for a non-alcoholic sparkling wine or a dry sparkling apple cider.
* Smart Pre-Batching: Multiply the Aperol and pomegranate juice measurements to fill a container ahead of time. Store the base chilled in the refrigerator, pouring out 4 to 5 ounces per glass before topping with fresh bubbles on demand!
