  • 5 Sweet Potatoes Peeled and diced (4½ cup or 1000g)
  • 2 tbsp Olive Oil
  • ¼ cup Almond Milk or your choice of plant milk or non-dairy milk (60ml)
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 1 dash Freshly grated Nutmeg
  • ½ tsp Salt
  • tsp Ground Black Pepper
  • 1 bunch Fresh Parsley For topping

    If you want to make mashed sweet potatoes but just don’t have the time to wait for the potatoes to cook, you can use a quick hack. Just place the sweet potatoes in a microwave safe bowl with a tiny bit of water in the bottom. Microwave at high heat for 3-5 minutes or until the sweet potatoes are very soft. This should reduce your cooking time by a good 20 minutes and the mashed potatoes will still turn out just as delicious.
