Ingredients

  • 9 medium Carrots Chopped
  • 2 Red Onions Chopped
  • 1 cup Chopped Vegan sausages (or lentils)
  • 3 Garlic Cloves Minced
  • 1 tbsp Soy Sauce
  • 2 tbsp Smoked Paprika
  • 1 tbsp Olive Oil
  • 1 can Coconut Milk
  • ½ Lemon - juice from
  • Pinch of salt
  • Pinch of Chili Powder
  • 1 bunch Fresh Basil Chopped
  • Vegan Parmesan

Instructions

  • Heat the olive oil in a pan and add the chopped carrots. Let the carrots cook for a few minutes while stirring occasionally before adding the onions. Let it cook at medium high heat until the onions turn clear.
  • Next, add the spices, soy sauce and garlic and stir until everything is combined. Let it cook for just a minute to bring out the flavors in the spices before adding the coconut milk and lemon juice.
  • Let the dish simmer until the carrots are cooked but still retains a little bite.
  • Finally, add the freshly chopped basil and serve with hot pasta topped with a bit of vegan parmesan.
