2Red OnionsChopped
1cupChopped Vegan sausages (or lentils)
3Garlic ClovesMinced
1tbspSoy Sauce
2tbspSmoked Paprika
1tbspOlive Oil
1can Coconut Milk
½Lemon - juice from
Pinch of salt
Pinch of Chili Powder
1bunchFresh BasilChopped

Instructions
Heat the olive oil in a pan and add the chopped carrots. Let the carrots cook for a few minutes while stirring occasionally before adding the onions. Let it cook at medium high heat until the onions turn clear.
Next, add the spices, soy sauce and garlic and stir until everything is combined. Let it cook for just a minute to bring out the flavors in the spices before adding the coconut milk and lemon juice.
Let the dish simmer until the carrots are cooked but still retains a little bite.
Finally, add the freshly chopped basil and serve with hot pasta topped with a bit of vegan parmesan.
