Ingredients

Chorizo Spice Recipe Ingredients

  • 1 bay leaf
  • ½ teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons ancho chile powder
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground coriander
  • 1/8 teaspoon ground cinnamon
  • 1/3 teaspoon cayenne pepper - optional, for extra heat

Instructions

  • Break the bay leaf into small pieces and place them in a mortar. Lightly grind with a pestle. Add the oregano and thyme, then grind until finely powdered.
  • Measure out the remaining spices and mix them with the ground herbs in a container. Stir well to combine.
  • Transfer the seasoning to a jar with a tight-fitting lid and store it in a cool, dry place for up to 6 months or longer.

Notes

Store in an airtight container for up to 6 months. 
Use it to season veggie "meats", tacos, or stews for a bold, authentic chorizo flavor!
