Ingredients

Caribbean Green Seasoning ingredients

  • 1 bunch chadon beni culantro - or 1 bunch cilantro (about 50 g)
  • ½ bunch (25g) parsley
  • 4 large (50g) large scallions (chives)
  • 1 head (50g) garlic - peeled
  • 1 small (70g) onion - chopped
  • 1 bunch thyme - 8-10 sprigs, about 10 g
  • 1-2 stalks (30-50g) celery - sliced
  • 2 pimento peppers - optional, about 20 g total
  • ½ grilled red bell pepper - sliced - I used grilled peppers from a jar, but you can also grill them yourself (about 60 g)
  • 2 tbsp (30ml) olive oil or water (as needed for blending)
  • 1 tablespoon lime juice

Instructions

  • Prepare the ingredients: Wash all herbs and vegetables thoroughly in a colander.
  • Chop: Roughly chop everything to make blending easier.
  • Blend: Add all ingredients to a blender or food processor.
  • If using a blender, blend on high speed until smooth, adding olive oil or water as needed. For a slightly chunky texture, blend in short bursts.
  • If using a food processor, pulse until the herbs and vegetables are finely chopped. Scrape down the sides and add liquid if necessary.
  • Store: Transfer the seasoning to a clean mason jar or portion it into an ice cube tray. Refrigerate for up to a week or freeze for longer storage.
  • This seasoning is a game-changer for marinades, stews, soups, and more—bringing the bold flavors of the Caribbean into every dish!

Notes

Storage and Shelf Life
Refrigeration: Store in an airtight glass jar for up to 1 week.
Freezing: Pour into ice cube trays, freeze, and transfer cubes to a zip-top bag. Use within 3 months.
